Gluten free fluffy apple & banana pancakes



I don't know about your family, but mine love pancakes! They are incredibly easy to knock up but feel like a bit of a treat in the morning. Beats cereal from a box hands down!

Having discovered this fantastic gluten free flour from Doves Farm (it's a mix of rice, potato, tapioca, maize, buckwheat), I use it in place of regular wheat flour, but both work equally well here.

I often up the protein quotient by adding a tablespoonful of Great Lakes Gelatin (Collagen Hydrolysate). I use this every single day in coffee, porridge, smoothies or whatever as it's very good for you and is undetectable to taste). Or you could just as easily add some Lucuma powder for a wonderful butterscotch flavour.  It's packed with iron and minerals and no empty calories like sugar. You could add any other 'superfood' like Maca or Boabab for that matter.



Recipe

Ingredients


1/2 tsp baking soda

1 tsp gluten free baking powder (Doves Farm)

1 tsp vanilla extract

1 medium or large egg (60ml approx)

1 cup apple sauce (4 oz/ 113g) (I used Gefen Natural applesauce individual cups which are available from most large grocery stores) or make your own

2 small or 1 large very ripe banana (mashed)

1/2 tsp Himalayan pink salt

1 1/2 cup Riazhenka cultured baked milk (I use this organic one from Bio-tiful Dairy) or you could just as easily use buttermilk. Add more or less, depending on the thickness of the batter you like. 

1 tbsp very soft (or melted) unsalted butter (I like to use raw, grass fed butter, but whatever you like)

On several occasions I've forgotten to add the butter and this recipe works just as well without, so don't worry if you forget, can't be bothered or just don't want to add it!

Regarding the cup measurements, you don't have to be that precise with this recipe. It is virtually foolproof so it's no big deal if you're using imperial or metric cups. 

This recipe also works well with a little cinnamon but my kids prefer it without. 

Method

Melt your butter. I just put it in the large jug that I will be using to mix the batter in then microwave briefly. 

Mix the dry ingredients in a separate bowl. 

Mash the banana in a large jug, then then add the applesauce, egg, vanilla and butter and whisk to combine. Then add the Riazhenka or buttermilk to the fruit and stir. 

Add the dry mix to the wet and whisk together for a minute. Let it sit for a short while whilst you heat your pan or griddle to a medium heat. You know it's ready when you toss a little water on the pan and bubbles skip across the surface. 

Smear some bacon grease or butter on the surface of the pan or griddle then fry in batches of four at a time over a medium heat for a couple of minutes until bubbles appear, then turn over for roughly a minute, et voila. 

Serve with butter and maple syrup or whatever you fancy!  If you like, you can throw some berries in a nonstick pan with the maple syrup to heat through gently and release their juice, then serve on top of the pancakes.
